Especially, Greek food.
I love to try new an interesting dishes.
I love to travel if it means I get to try
the local cuisine.
Here is a very simple Greek dish but
full of flavor:
1/4 cup extra virgin olive oil
4 scallions (thinly sliced)
3 large garlic cloves (thinly sliced)
6 large anchovy fillets(finely chopped)
30 Greek olives(pitted, chopped)
2 lbs shrimp(shelled, deveined)
1/4 cup white wine
1 Tablespoon unsalted butter
1Tablespoon lemon juice
Salt, pepper to taste
Orzo (already cooked )
1/2 cup toasted almonds
Step 1:
Heat olive oil in skillet,
Add scallions and garlic cook until
softened (3 min)
Add anchovies and mash them with
a fork(2 min)
Add olives, shrimp, stirring once
or twice( 2 min)
Add the wine and simmer
continue stirring(2min)
Step 2:
Remove skillet from heat.
Stir in the butter and lemon juice.
Add salt and pepper.
Step 3:
Serve shrimp over orzo
and sprinkle with toasted almonds.
Serves 4

(One thing you have to get used to is
using anchovy fillets. It is used widely
in Italian, Greek and unique European dishes.
You wouldnt notice the taste of it, unless you
were told that it was in there. It is more
the mental thought of eating them than anything)

Are you sure you know what hick means? :) Or, maybe I'm the one who doesn't know?
Here's my take on international cuisine -- a dish named for a famous German city. My experience with Mediterranean dishes is rather limited ... hummus.
